They say it’s important to always eat breakfast and when I eat breakfast, I prefer to have a baked good of some sort. I typically get my family bagels, toast, muffins, etc. for breakfasts because when I’m working all day a baked good for breakfast seems to hold me over longer. And don’t worry, I typically pair it with a fresh fruit of some sort, as well.
I work in a building with a Starbucks and another coffee house on the first floor, as well as with a Panera Bread on my way in. So often it’s very easy and tempting to grab my breakfast at one of those places as I drive or walk in, but that’s not always so friendly on my wallet. So when I do have time, I like to make and keep some quick breakfast items in my house for a quick grab and go breakfast.
One of my favorite things to make are these Bacon Cheddar Cheese Scones. They aren’t hard to make and they have a nice taste to them without being overwhelming.
These scones are easy to make…follow the recipe below.
Bacon Cheddar Cheese Scone Recipe
Ingredients
- 5 slices of Farmland Bacon chopped
- 3 cups of flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1.5 teaspoon of garlic salt
- 1 stick of unsalted butter cut into pieces
- 1.5 cups of sharp cheddar cheese grated
- 1 cup of buttermilk plus 2 tablespoons set aside
Instructions
- Preheat the oven to 400 degrees.
- Cook your bacon until crisp, drain, and set aside on paper towel.
- Mix together flour, baking powder, sugar, and garlic salt.
- Fold chunks of butter into dry mixture, not over mixing.
- Add the bacon and cheese and mix.
- Add buttermilk and mix until it becomes a sticky dough. Don't overwork.
- Pull dough from mixture and form into two balls.
- On a lightly floured surface, flatten dough into 7 inch circles about 3/4" thick and cut each circle into 8 wedges. Transfer wedges to a baking sheet and lightly paint the tops of the wedges with the 2 tablespoons of buttermilk.
- Bake until golden brown for 22 to 23 minutes.
- Remove from heat and let cool for a few minutes. Serve warm or reheated.
I used Farmland Fresh Peppered Bacon because it added a little extra flavor to the scones with the pepper. It was perfect and not overly peppery like I was afraid of at first.
Cook your Farmland bacon up and set aside. If you’re a true bacon lover, you may want to make more than 5 pieces of bacon for this recipe. Also, if you’re unable to resist eating the bacon while you’re making the recipe, then make more…:)
Once your ingredients are mixed together, form two circles like this one, on a lightly floured surface and cut into wedges. The dough shouldn’t be overly wet, but if you find it too dry, add a little more buttermilk to the mix to add some more moisture.
Cut your circles into wedges and add your wedges to the baking sheet.
Top each wedge with a little bit of buttermilk painted on top and then pop in the over for 22-23 minutes until golden brown.
Then enjoy your DELICIOUS scones. They’re obviously best out of the oven, but they’re pretty much good anytime…breakfast, lunch, dinner, or snack. Enjoy!
