With St. Patrick’s Day right around the corner, I thought I’d share a simple and delicious St. Patrick’s Day Cookie Idea with you guys with these fun little Green Cherry Coconut Cookies. The cookies are super easy to make and are so soft and flavorful. Your family will love them and your kids will love the cute little green cherries inside. St. Patrick’s Day Cookies
My mom has made these cookies since I was little and I’ve always loved how soft and chewy and full of flavor they are. The little bites of cherry make the cookie even better and add a great texture.
I recently bought a Cookie Dough Scoop and it has been one of those things you don’t realize you need for so long until you get one and it’s SO much easier to make cookies from that point forward! I highly recommend investing in one!
This recipe yields about 2 dozen cookies and any type of maraschino cherry could be used for this, including real cherries if you’re not into the “artificial” cherries. You could even consider adding a little green food coloring to the cookie dough to make them extra special for St. Patrick’s Day!!
For this recipe you’ll need:
1 egg
1 cup sugar
1 cup Crisco
2 cups flour
1 tsp salt
1/2 tsp baking soda
1/2 cup chopped maraschino cherries
1 1/4 cups coconut
1 teaspoon almond extract
Instructions:
- Cream together margarine, sugar, and egg until fluffy.
- Add all the dry ingredients and fold in cherries and coconut.
- Bake at 375 degrees for 10-12 minutes on an ungreased cookie sheet.
