Fiesta Casserole Recipe
This recipe is so simple and just requires a few ingredients and then your choice of toppings. If you want to spice it up more, you can add a spicier salsa or you can even add diced chilis and jalapenos directly into the mix. The options are endless! You just need to start with Success Basmati or Jasmine Rice from Kroger and then add the ingredients from there…bake in the oven and ta-da, you have a casserole ready to feed a hungry family in under one hour!

I start by cooking 3-4 chicken breasts in a slow cooker the morning before I make my meal. If you don’t want to do it that way, you just need to have pre-cooked chicken available for this recipe prior to putting it in the oven (or you need to adjust your oven cook times to account for the raw chicken). Since my chicken is already cooked, the next step is to cook my Success Jasmine or Basmati Rice. I boiled 4 bags in a pan full of water for 10 minutes, then emptied them into a bowl with my ingredients to create the casserole.
Once all the casserole ingredients are mixed, you place in the oven to cook at 350 degrees for 15 minutes, then pull it out at the 15 minute mark to add cheese and place it back in for another 15 minutes (total cook time 30 minutes). Pull out of the oven and let cool a few minutes, then you can cut into squares and top with your favorite ingredients like sour cream, black olives, hot sauce, or otherwise!
We even like to enjoy our casserole with chips and salsa too sometimes!!
This is such an easy dinner idea and you’ll love that it makes a ton to feed a large family or to take for work the next day or freeze for a frozen meal the following week. You can even decide to make this casserole in two smaller pans and save one of them for a freezer meal idea!

Fiesta Casserole
An easy family dinner idea that is made in under one hour and can be made to your family's likings with your favorite Mexican flavors and toppings!
Start by preparing your chicken. I like to cook my chicken in a slow cooker for 6 hours with chicken broth and taco seasoning and then cut up for this casserole and set aside.
Prepare your Success Rice according to the package instructions.
Once rice is prepared, empty into a bowl along with all the ingredients except for the cheese. The cheese will be placed on top during baking. Mix the ingredients well and then empty into a 9 x 13 pan.
Preheat oven for 400 and place inside of oven for 15 minutes to cook. At the 15 minute mark, remove and top with two cups of cheese, then place back in the oven for another 15 minutes.
After 30 minutes of cooking, pull from oven and serve warm with toppings, as desired.
