Easy Marinated Chicken Recipe with Greek Salad

On the weekends we grill. When we grill, I like to add a little extra meat on the grill to throw on top of salads for lunch during the work week–but the meat needs to have some flavor and be extra tender so it doesn’t dry out! It’s Grilling Season with Giant Eagle, so I’m able to head over and pick up everything I need in one stop! Today I want to share with you how I meal prep a bit for the work week with this delicious and easy marinated chicken recipe with a Greek salad! I throw my marinade together on Sunday mornings, then grill the chicken with dinner on Sunday night and I have plenty of protein for the rest of the week to enjoy! When I take my lunches into work, I pair my marinated chicken and salad with Dasani Sparkling® Water and it’s a match made in heaven! Here’s what you need for this Chicken Marinade recipe:

Soy sauce

Worcestershire Sauce

Brown Mustard (regular mustard works too)

A1 Steak Sauce

Italian Dressing

Lemon Juice

Minced Garlic

Add all those items (specific quantities in recipe below) in a bowl, whisk together well, then place your chicken in there to marinate. This makes a great overnight chicken marinade, but if you don’t have that long, try to get it marinating at least 5-6 hours for best results. The chicken will be tender and so flavorful the longer it sits!

Once it’s marinated long enough, throw on your grill and get your salad prepped! We served over romaine with feta cheese, cucumbers, tomatoes, kalamata olives and then we place the grilled marinated chicken over top!

I find that one of the hardest parts of summer grilling can be finding that happy medium between eating healthy and eating richer foods, so this is a great grilling recipe if you’re looking for healthier or lighter options on the grill that can work throughout the week!
