Mini Buttermilk Pancake Stacks

A few years ago I did a post on the all time BEST buttermilk pancakes I have ever made. The recipe is amazing and the pancakes are thick, fluffy, and flavorful. So I thought it would be fun to make them again, but in mini pancake stacks for your Easter Brunch! They are SO cute and with a little toothpick and washi tape adornment, you’re sure to add some fun to your Easter Brunch!

The recipe is as follows:

2 cups flour

2 tbsp granulated sugar

4 tsp. baking powder

1 tsp. baking soda

1 tsp. fine salt

2 cups buttermilk

4 tbsp melted butter

1 tsp vanilla

2 beaten eggs

Mix the dry ingredients together in a bowl and set aside. Mix the wet ingredients in another bowl. Mix the wet ingredients into the dry ones and mix GENTLY just enough to combine. Don’t overmix…you’ll notice how fluffy the batter gets and that’s what is going to keep your pancake fluffy and light! Heat your skillet and use a non stick spray on it. Add your pancake mix…I used small round cookie cutters to get 2 inch wide pancakes. Once your pancake is cooked, stack them up, add a butter pat on top, drizzle with syrup, and add a toothpick with washi tape flag.

It’s AMAZING how much cuter pancakes can be when they are mini sized with washi tape decorations on them πŸ™‚ Now just WOW your guests with your bright pancake display and enjoy the fluffiest pancakes EVER! OMG these are so good. πŸ™‚

    ok, i was creating a recipe close to yours that calls for more bp. i haven’t tried it yet because i was a bit concerned that it would affect the taste of the pancakes. i know too much soda will give a really gross taste. i’m assuming that amount bp won’t yield a gross after taste? i have a few other questions before i try it. how long do you mix, just a few secs to mix, like less that 30secs? about 4 revolutions? and what utensil do you use to mix? i use i whisk i’m hoping it doesn’t matter. also, how long do you wait after you mix? i’ve read so many different suggestions, immediately after, 5-10mins after, 1 hour, and even 24hours. i’ve tried them all when i used a buttermilk recipe that called for 2c flour and milk, plus 2t bp and 1 t bs. (plus other stuff) so i’ll have a better idea of what to do after i know what you did regarding timing and technique. thanks a lot! can’t wait to try them. if this doesn’t work, my next attempt will include carbonated beverage, and yogurt. my dry ingredients could be too old too, i need to check that as well.
