One of the best feelings for me is to start my week off with food in the pantry, a clean house, a freshly mowed yard, and laundry taken care of…and 9 times out of 10, we don’t get all that accomplished, but when we do, it feels like a huge victory. I was out shopping today and I had to laugh to myself because when I’m making up my grocery list, one thing seems to appear in a LOT of my recipes and meals…and it’s cheese. My kids love cheese sticks, grilled cheese sandwiches, shredded cheese on top of tacos and spaghetti. So in celebration of our love for cheese, I thought I’d also share one of our favorite cold sandwich recipes for Buffalo Chicken Salad sandwiches! With just the right mix of buffalo, ranch, and chicken…topped with cheese, lettuce and tomato on a fresh bakery bread loaf…it’s the perfect summer lunch recipe!
How to Make Buffalo Chicken Salad Sandwiches
For this buffalo chicken salad recipe, I used the Colby Pepper Jack cheese because I really like the added flavor that it brings, but if you aren’t into the Colby Pepper Jack, you can try any of your favorite cheeses including Sharp Cheddar, Swiss, Provolone, and Havarti.
I started by slicing my bread loaf in half, cutting up some romaine, slicing up some fresh roma tomatoes, and making my chicken salad by mixing it with mayonnaise, cream cheese, and ranch dressing.
Next I layered my Colby Pepper Jack cheese on my bun, followed by the chicken salad, then topped it with fresh buffalo sauce. You can actually mix the buffalo into the chicken salad, but I like to leave it out so that my kids can enjoy the sandwich too. I make half the sandwich with and the other half without.
Next I layer on my veggies…a thick layer of romaine topped with fresh tomatoes! Then I top the whole thing off, place toothpicks in it and slice to serve!
Everyone liked this sandwich a lot, it was really flavorful and when you pair it with soft bakery bread and fresh cheese, you truly have the perfect cold sandwich. You can view the whole recipe below!

Buffalo Chicken Salad Sandwiches
- 2 cans chicken
- 1/4 cup mayo
- 1/8 cup cream cheese
- 1/8 cup ranch dressing
- 1/8 cup buffalo sauce on side or mixed in
- Open cans of chicken and drain.
- Mix in mayonnaise, cream cheese, ranch, and buffalo sauce.
- Serve on fresh bakery bun topped with cheese slices, tomato, and lettuce.
