I have to say that I love sweets and I’ve been trying to eat better for the New Year. So I made this delicious recipe this weekend and HAD to because they were so soft and smelled so amazing. Funfetti Cake Mix Cookie Bars
I thought that these would make great Valentine’s Day dessert ideas for all of you having class parties or inviting friends over. Kids (and adults too!) LOVE sprinkles and these are as pretty as they are tasty!
They are a great combination of sugar cookie mix and cake mix to make the most soft, delicious cookie bars you can imagine! Top them with your frosting of choice and you’re ready to go!!
For my recipe I made them with Sugar Cookie Mix and Rainbow Chip cake mix. You mix together with butter, eggs, and vanilla and then spread evenly across the bottom of a 9×13 pan.
Once they have cooled off you can frost them and top them with even more gorgeous sprinkles! I cut them into bars and served individually on a plate…and they were quite the hit!

If you want to mix things up, you can do things like top them with chocolate or vanilla frosting, or make S’mores cookie bars as another option. This can be the base recipe for tons of delicious cookie bar recipe combinations! Just think of all the possibilities!

Funfetti Cake Mix Cookie Bars
Ingredients
- 1 pouch sugar cookie mix
- 1 box Funfetti Cake Mix
- 1 cup butter, softened
- 3 eggs
- 1 tsp vanilla (for bars)
- 3 cups powdered sugar
- 2-3 tbsp milk
- 1 tsp vanilla (for frosting)
- sprinkles
Instructions
- Preheat oven to 350°F and grease bottom of 13x9-inch pan with cooking spray.
- In large bowl, beat sugar cookie mix, cake mix, melted butter, eggs and 1 teaspoon vanilla with electric mixer on low speed 30 seconds. Stir in sprinkles and spread evenly across the bottom of pan.
- Bake 32 to 34 minutes or until golden brown.
- Cool completely.In large bowl, beat 1 cup softened butter, the powdered sugar, 2 tablespoons milk and 1 teaspoon vanilla until combined.
- Add additional milk 1 teaspoon at a time until spreading consistency. Spread over cooled bars.
- Sprinkle with assorted candy sprinkles. Cut into small pieces and serve!
