In case you didn’t realize…next week is Christmas. I don’t know about you, but this weekend will be filled with present shopping, baking, grocery shopping, cleaning, package wrapping and more! I still have to plan out my menu for Christmas Eve, Christmas breakfast, and Christmas dinner…snacks, drinks, and goodies need chosen…SO MUCH TO DO!! If you’re SUPER overwhelmed with what to make this holiday season, I thought I’d help you out with an easy after dinner Christmas dessert idea…Eggnog Rice Pudding. If you’re a rice pudding fan, like myself, this is a great take on a traditional recipe and it’s SUPER easy to make!! I bet you’d have most of this stuff on hand already, especially if you like eggnog!
I modified Minute® Rice’s Classic Rice Pudding Recipe and edited it to use Eggnog instead. Here’s my modified recipe:
2 cups eggnog
1 cup milk
1 cup Minute® White Rice
dash of salt
2 eggs
1 tsp vanilla or rum flavoring
nutmeg to taste
Directions:
Combine eggnog, milk, rice, sugar, and salt in medium saucepan. Bring to a boil, stirring constantly. Reduce heat to medium-low; simmer 6 minutes, stirring occasionally. Beat the eggs and vanilla lightly in a small bowl. Stir small amount of hot rice mixture into the eggs. Stirring constantly, slowly pour egg mixture back into hot mixture. Stirring constantly, cook on low heat 1 minute until thickened. DO NOT BOIL. Remove from heat. Let stand 30 minutes. Serve warm with a dash of nutmeg on top. Refrigerate leftovers.
