No-Bake Peanut Butter Cornflake Cookies

As a kid growing up, I can remember my mom and grandmother making these delicious little No Bake Peanut Butter Cornflake Cookies with me. They have a rich peanut buttery taste, they’re chewy, crunchy, and best of all…they’re made in under 30 minutes and you can make a ton of them quickly. I like also like it because I buy Kellogg’s Corn Flakes to make my favorite Cheesy Potatoes recipe, but I never end up using the full box of cereal because no one likes to eat corn flakes on their own! So I can use up about half the box of corn flakes cereal by making these cookies and still have some leftover for my Cheesy Potatoes recipe when I need it!

How to Make Peanut Butter Cornflake Cookies

These delicious little peanut butter cornflake chews are great because they are full of flavor and I just love that they are no-bake and can be made quickly. For us, it helps us use up corn flakes around the house that I use for other recipes and all you need is peanut butter, corn syrup, sugar, and corn flakes. That’s right! All you need is four ingredients to make this simple cornflake cookies recipe! And if you’re feeling super creative, you can go one step further and drizzle them with melted chocolate to create the ultimate no-bake cookie!

Here’s how to make these delicious little cornflake cookies:

Step One. 

In a large mixing bowl add six cups of Kellogg’s Corn Flakes. If you want to make less cookies, you can half this recipe and only use three cups if desired.

Step Two. 

Line a baking sheet with parchment paper so that when you make the cookies they don’t stick to the sheet.

Step Three. 

Place a saucepan on your stove top and combine sugar with corn syrup and peanut butter over medium heat. Stir continually until the mixture begins to bubble and the sugar is dissolved.

Step Four. 

Pour peanut butter mixture into bowl over corn flake and gently stir until coated.

Step Five. 

Gently create small round balls and place on parchment paper to cool for about 30 minutes.

Can you freeze cornflake cookies?

I would not recommend freezing cornflake cookies. It will likely change the texture too much.

These cookies will do well for about a week stored in an air tight container.

How to make cornflake cookies with chocolate?

If you want to add chocolate to your no bake cornflake cookies, I would simply melt some chocolate and drizzle it over top of the cookie and let harden.

How to make peanut butter cornflake cookies without corn syrup?

I have never made these cookies without corn syrup, but you could try to make them using homemade corn syrup. Search “homemade corn syrup” and see what the recipe looks like. That would be my best recommendation for cornflake cookies without corn syrup.

Peanut Butter Cornflake Cookies (No Bake)

  • Gently mix together the corn flakes and peanut butter mixture (trying not to smash the cornflakes).
  • Roll scoops of cornflakes into small balls and place on parchment paper to cool.
  • Let cool about 30 minutes before eating.
