I’ve been on quite the kabob kick lately…if you remember when I shared these delicious Margarita Chicken Kabobs the other week. This week I’m sharing a family favorite and something I traditionally make in the wok, but I thought I’d try it on the grill and it for sure didn’t disappoint. These Spicy Asian Chicken Skewers are SO flavorful and simple to make…and I love the fact that I can make my protein and veggie at the SAME time and make it quickly with the help of the HomeRight Electro-Light fire starter! This recipe is super easy and it’s best to let the chicken marinate for about an hour before serving. Normally, for us–users of a charcoal grill, we’d have to let the grill warm up for 30 minutes before we put the chicken on, but with the Electro-Light Fire Starter…we’re ready in a matter of minutes! It’s a lifesaver!
You’ll cook the chicken and broccoli skewers until they are well done, about 10-15 minutes. And while they’re on the grill, get your instant rice made up (or regular if you’re the overachieving sort LOL).
Once cooked, pull them off the grill and serve over rice…your whole meal made in about 20-25 minutes with little cleanup! That’s what I call a great weeknight meal!
I will warn you that these are a tad spicy, but you can adjust the seasoning down a little bit if you’re not the spicy type. The flavor is still amazing even without the “heat!”

Spicy Chicken Marinade:
1/2 cup white vinegar
1/2 cup soy sauce
1 tablespoon minced garlic
2 teaspoons ground ginger
1/2 teaspoon red pepper flakes (optional)
1-2 lbs chicken, cut into chunks
drizzle with olive oil and sprinkle with garlic salt
- Mix together all ingredients above for the chicken marinade and place in a medium sized bowl.
- Add chicken breasts, cut into chunks. Let marinate minimum 10-15 minutes, but better if marinated longer.
- Once done marinating, in a small bowl drizzle cut broccoli with olive oil and sprinkle with garlic salt.
- On skewers, alternate chicken and broccoli down the skewer.
- Place on hot grill and cook until the chicken is not pink in the middle.
- Serve over rice.
