I have an amazingly simple cheesecake recipe that I thought I’d turn into a fun little dessert today. You can use those ripened bananas and turn them into delicious Banana Cheesecake Rollups. They are WONDERFUL with a cup of coffee or as a great brunch recipe!! Here’s how I made them…..
8 oz. cream cheese
3/4 cup of sugar
1/2 tsp vanilla
1/2 cup of brown sugar
2 cans of crescent rolls
1/2 cup of sugar
1 stick of butter
Combine cream cheese, sugar and vanilla in a bowl and mix on high.
Once mixed, unroll your crescent rolls and take your first corner. Starting at the largest end, add a tablespoon of cheesecake mixture, next sprinkle some brown sugar on top, then add a half of banana on top.
Tuck the edges over top of the banana and then rollup.
Repeat this until you’ve used up all the pieces of crescent roll. Then start to prepare your topping.
Bake in oven for 15-18 minutes until golden brown and cooked through. Once baked, sprinkle some powdered sugar over top and serve warm.
They’re super good with a cup of coffee..
