Thanksgiving is just around the corner, it’s kind of hard to believe! More and more people are expanding their festivities to include Friendsgiving celebrations, as well! I think when you think of Thanksgiving and Friendsgiving a few key things come to mind–turkey, pumpkins, and cranberries! Whether you’re using cranberries for decoration savory dishes, or for sauce and desserts… it’s that time of the year to start making your shopping list and checking it twice! Today I have a fun and easy way to incorporate fresh cranberries into your Thanksgiving and Friendsgiving celebrations with these delicious White Chocolate Cheesecake Cranberry Rollups! This is my entry for the Cranberry Friendsgiving Photo Contest (see below for details!).
Cranberry Dressing:
3/4 cup sugar
1 cup water
1 package fresh cranberries
pinch of salt
1 cinnamon stick
Cream Cheese Filling:
8 oz. cream cheese
3/4 cup of sugar
1/2 tsp vanilla
1/2 cup white chocolate chips, melted
2 cans of crescent rolls
**1/2 cup white chocolate chips for drizzle (optional)
**Powdered sugar to sprinkle over top (optional)
How to:
Preheat oven to 375 and lightly grease cookie sheet.
In a saucepan, bring your water, sugar, and pinch of salt to a boil, then add in cranberries and cinnamon stick. Cook on medium for 10 minutes until mixture begins to get thick and cranberries are popping. After 10 minutes reduce to low for another 3-5, then remove from heat and let cool.
While cranberries are cooling, combine cream cheese, sugar and vanilla in a bowl and mix on high. Once mixed, melt your white chocolate in a separate bowl for one minute intervals until melted, then add to cream cheese mixture and mix well.
Once cheesecake mixture and cranberries are ready, unroll your crescent rolls. Take your first corner, starting at the largest end, and add a tablespoon of cheesecake mixture and add some cranberry sauce on top. Tuck the edges over top of the filling and then rollup. Bake for 11-13 minutes until lightly browned. Remove from oven and let cool. Optional– drizzle white chocolate over top of the rollups, leave them plain or sprinkle powdered sugar over top.
