I like to make the meatball mixture during the weekend, roll it into balls, and freeze it and then simple defrost and prepare the day of!! You can now make weekend meals on a weeknight schedule!
Swedish Meatballs and Noodles in Crockpot or Stove Top
The sauce to put your Swedish Meatballs in is so easy! You’re mixing together simple ingredients like cream of mushroom soup, beef broth, and salt and pepper to create the perfect Swedish Meatball gravy. The recipe is a simple and tasty one that anyone in your family can appreciate and best of all, you can either make it all and reheat leftovers for the next day or you could make half of the meatballs and save the rest for another meal the following week.
So you start by mixing together your meatball mixture: 2 lbs ground beef, 1/2 cup bread crumbs, and one can of Campbell’s rice and chicken soup. You can also add onion, salt, and pepper to your seasoning at your discretion. My family doesn’t like onions, so I left them out of mine. After it’s completely mixed, I rounded it into small balls and set on a cookie sheet and then I bake for 20 minutes at 350 degrees. You can also decide to freeze your mixture at this point and save for later in the week.
Easy Swedish Meatball Sauce
While your meatballs are baking, in a saucepan mix together 2 cans Cream of Mushroom soup, 1 can beef broth, salt and pepper, and 8 oz. sour cream. Heat until boiling and then set aside.
What to serve with Swedish Meatballs
Once the meatballs are done baking, I like to pour my “gravy” mixture into a crockpot and then let the meatballs simmer for a few hours in the sauce. If you are in a hurry, you can serve immediately too. I serve over noodles with rolls and salad for my family and everyone loves it. You can also make some roasted veggies to serve with Swedish Meatballs, as well.
Swedish Meatballs and Noodles
Ingredients
- 2 lbs ground beef
- 1 can Campbell's Chicken with Rice soup
- 1/2 cup finely chopped onion optional
- 1/2 cup fine bread crumbs
- salt and pepper to taste
- 2 cans Cream of Mushroom Soup
- 1 can beef broth
- 8 oz. sour cream
- noodles to serve over
Instructions
- Mix together ground beef, chicken and rice soup, onions, bread crumbs, salt and pepper and form into balls (not too big).
- Bake meatballs in oven at 350 degrees for 20 minutes.
- In a saucepan, combine cream of mushroom soup, beef broth, sour cream and salt and pepper and bring to a boil.
- Serve meatballs with gravy immediately OR pour gravy into a crockpot and add the meatballs in and let simmer for 2-3 hours on low. Then serve over noodles or rice.
