Easy Chicken Stir Fry Recipe

With Chinese New Year upon us, I thought there was NO BETTER TIME to get some delicious Asian inspired recipes! Did you guys know that this year, starting February 16th, 2018, is the Year of the Dog?! I wanted to celebrate with the folks at Ling Ling, who make amazing Chinese cuisine, and have this yummy stir fry to celebrate!

The recipe is so simple to make, see the full instructions below. You’ll basically mix together a simple stir fry marinade, add it to your chicken, add your veggies, and then use our new favorite Ling Ling Fried Rice to pour the chicken stir fry over top.

This was our first time using Ling Ling Fried Rice and my husband proclaimed that this stir fry recipe was WAY better with Ling Ling Rice than it is with my regular plain rice!! And getting a stamp of approval from my husband (the pickiest of eaters), says a lot!

Easy Chicken Stir Fry Recipe

Ingredients

• 2 tsp ground ginger
• 1 tsp minced garlic
• 1/2 tsp crushed red pepper flakes *optional, reduce or leave out if you don't want any heat
• 3 tbsp soy sauce
• 3 tbsp white vinegar
• 2 tbsp olive oil
• 1 1/2 lbs boneless chicken cut into strips
• 2 bags Ling Ling Fried Rice
• Veggies of choice I used carrots, water chestnuts, and bean pods

Instructions

1. In a small bowl, mix together ginger, garlic, and red pepper flakes (optional). Add soy sauce and vinegar and set aside.
2. Place wok (or large skillet) over high heat and drizzle olive oil in. Heat oil until hot and add chicken to wok. Stir fry several minutes until lightly cooked on all sides and add soy sauce mixture to the wok.
3. Add veggies of choice to stir fry and put lid on pan and cook on medium for 10-15 minutes. Continue to stir until cooked.
4. Remove from heart and serve over hot cooked Ling Ling Fried Rice.

I personally love carrots, water chestnuts and bean pods in my stir fry, but you can use any stir fry vegetables that you’d like as part of the recipe. Add broccoli, cabbage, cauliflower…whatever you like best!

You can make your Ling Ling Fried Rice in a pan or you can microwave it, which makes it perfect for busy weeknight meals. I really liked how quickly it cooked and that it truly had a freshly cooked flavor to it. It certainly makes my life a lot easier to have more options for putting food on the table quickly.
