Weekdays in my house now are a little chaotic. We’re in swim lessons, baseball, tae kwon do…not to mention that my husband gives baseball lessons, I {obviously} blog…and somewhere in all that we try to make time to spend with friends and family and just relax. So for me, I need EASY and affordable meal ideas for my family all week long and my crockpot is my best friend because I can be ahead of the game for our evenings and have dinner well under way with less mess before we even leave in the morning! I have a really great, tasty and simple Greek Crockpot Chicken Pasta dinner that my family loves and I think you guys will too and I’m sharing it today!
In the morning I start by popping 3-4 chicken breasts into the crockpot with a cup of warm water, one chicken bouillon seasoning, a teaspoon of minced garlic, some olive oil, and garlic and season salt. I cook my chicken on high for about 5 hours or on low for 6-7 until done.
Once I get home, I pull my chicken from the crockpot and slice it up. While I’m slicing it, I prepare some pasta . Dinner is made, clean up is easy, and I serve with things like salad and garlic bread with it. Depending on your tastes, you could also add in artichokes or other veggies as you see fit. And typically for my family, we have enough left over for my husband or I to take leftovers for lunch the next day (WIN WIN!).
I’ve already trusted the Barilla brand for quite a while now and this new Ready Pasta and upped Barilla’s game quite a bit in my book because time is valuable and I want to spend more of it with my family and kids rather than over a stove or cleaning up messes.

Greek Crockpot Chicken
Ingredients
- For chicken:
- 3-4 chicken breasts
- 1 cup warm water
- 1 beef bouillon
- season well with seasoned salt and garlic salt
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- For pasta:
- 2 bags Barilla Ready Pasta
- 1 bar cream cheese softened
- 1 teaspoon minced garlic
- 1 can mild Rotel
- 1 cup frozen spinach
- 1 container feta cheese
- 1 small can black olives
- 1 tablespoon olive oil
Instructions
- In the morning, turn your crockpot on and add your chicken, seasonings, water and chicken bouillon, as well as the minced garlic. Cook on high for about 4-5 hours or low for 6-7. Pull out when cooked and slice, empty crock pot.
- Warm up your Barilla Ready Pasta and combine with softened cream cheese, garlic, Rotel (not drained), spinach, and olive oil and mix well.
- Add in cooked chicken and mix again.
- Top with feta cheese and black olives (artichokes are another fun option to add) and cook on low for about 30 minutes.
