Easy Asian Noodle Salad with Soy Vinaigrette
Asian inspired recipes are always popular in my house and I can’t pass up a good stir fry, potsticker, or noodle dish even if I try. A few weeks ago I shared my Easy Chicken Stir Fry recipe and today I wanted to share my newest favorite lunch creation…Easy Asian Noodle Salad with Soy Vinaigrette. This was inspired by an awesome salad idea I saw at a restaurant and since then I wanted to create my own version. Because I’m typically short on time, I like to use lo mien for my salad rather than trying to reinvent the wheel and create my own. Let’s see how easy this recipe is…
I start my salad with fresh chopped romaine lettuce, sliced carrots, sliced of fresh cucumber and then I add some red cabbage to the mix. Finally, I add some lo mien noodles, I let them cool and then I add onto the salad.
The noodles really add the perfect pop of flavor to the salad and are delicious warm or cool.
The noodles really add that pop of carbs I sometimes miss in my salad (being honest) and add a great flavor that you don’t realize pairs SO well with a great salad and dressing!

3 tablespoons rice wine vinegar
3 tablespoons soy sauce
1 tablespoon grated ginger
1⁄2 teaspoon minced garlic
2 tablespoons sesame oil
1⁄2 cup peanut oil or 1⁄2 cup grapeseed oil
