I’m always looking for new breakfast and brunch recipes for the weekends for my family. We find that if we eat a big hearty, mid-morning brunch, then we don’t have to go through the hassle of preparing another large lunch. We have a midday snack and an early dinner and we’re cutting back on preparation time and grocery bills. I came up with a fun take on an old classic by making these English Muffin Mexican Breakfast Pizzas! They take no time at all to make and they are a fun way to let your family make their own concoctions!!
Ingredients:
English muffins, sliced
VELVEETA cheese, one slice per pizza
1 tsp Salsa of your choice
Bacon or sausage (or both!)
2 tbs Scrambled Eggs
Small slice of avocado, for garnish as desired
1. Start by preparing your bacon or sausage as desired.
2. Add eggs to a large bowl and whisk with spoon, add in thinly sliced chunks of VELVEETA cheese along with a dash of milk and whisk until combined.
3. Cook eggs until done, then set aside in a bowl.
4. Slice your english muffin and toast lightly. Once it comes out of the toaster top with a thin slice of VELVEETA cheese (place in oven for a few minutes on low heat to melt if needed), add a spoonful of salsa, and then add your eggs. Garnish with a fresh slice of avocado and enjoy!!
I find that this pairs really nicely with a fresh fruit salad and steaming hot cup of coffee or tea. So sit back this weekend outside, make a yummy English Muffin Mexican Breakfast Pizza and enjoy the warm weather that’s finally upon us!!
