Make a yummy sweet snack with bright rainbow colored M&M and Chex mix, I’m positive you’ll have a hard time keeping the bowl full! This treat can be packaged up and given as rainbow treats for the neighbors. Usually we make much larger batches of this mix for parties, but for the quick snack I’ve cut the recipe to ⅓ the quantity for you today.
This is a great gluten free snack you can make for rainbow themed parties, St. Patrick’s day events and sharing a little every day happiness. It’s an easy snack the kids can help with, and I’m pretty sure I sampled more than my fair share while I was making it!
Ingredients
3 c Rice Chex® or Corn Chex® cereal
3 tbs Corn Syrup
2 tbs peanut butter
2 tbs butter or margarine
1 tbs granulated sugar
1 c M&Ms in rainbow colors (just sort out the brown ones)
¼ c rainbow colored jimmies sprinkles
Oh how I love mini M&Ms!
Note, the original Chex Party mixes use white chocolate or vanilla chips instead of Corn Syrup. I never have luck with the chips melting nicely. If you prefer chips, replace the syrup with ¼ chips.
How to Make Rainbow Chex Treat Mix

Place cereal in a large bowl and set aside.

In small microwavable bowl, combine syrup, peanut butter, butter and granulated sugar. Microwave uncovered on High for 1 minute, stir and cook an additional 1 minute. The mixture should be melted and bubbling slightly. Pour mixture over cereal, stirring until evenly coated. Sprinkle half of the jimmies and m&ms and gently stir.

Spread cereal treat mixture on parchment paper on a cookie sheet.

Optional: I like everything to stick together really well, so I put the entire cookie sheet in the oven for about 5 minutes at 350 degrees and then let cool again.
Extra yummy idea: If you’d like to add a little cloud inspiration to your treat mix, there are two different things to try.

Sprinkle powdered sugar over the top of the mixture to add a little bit of cloud inspiration to your rainbow treat.

Make mini clouds by pouring half of your coated cereal into a large plastic zipper bag with 1/2 cup of powdered sugar, seal and shake until cereal is coated.
To Serve, scoop into cupcake liners, sprinkle with remaining jimmies and candies. For some St. Patrick’s day fun, you can place your cupcake liners into my own free printable Shamrock cupcake wrappers.
