A few weeks ago we went camping and I was quickly reminded for the need of quick and easy dinners that you can prep in advance of your trip and just toss on the grill! Whether you’re camping or not, the summer is the perfect time of the year to toss some veggies, starches, and protein into a foil sack, place it on the grill, and come back in 30 minutes for a complete meal ready to eat straight out of the packet. Today I want to show you how to make Garlic Chicken and Potato Foil Packets with ONE secret weapon that pulls the whole dish together….Better Than Bouillon. Let’s see how easy it is to make this delicious chicken and vegetables in foil packet dinner!
For this dinner all you need is:
1 lb chicken tenders (I like the smaller cuts because they cook faster)
4 cups of quartered potatoes
green beans
Better Than Bouillon Garlic Base
Better Than Bouillon makes grilling easier because it is a concentrated paste that can be used to boost the flavor of grilling recipes as a marinade, a rub, a sauce, etc.. I also love that it can be used as an alternative to canned broths that expire quickly once opened or cubes that have potential to taste gritty or not dissolve completely. Better Than Bouillon has a wide variety of bases that can be used when grilling, including Chicken, Beef, Vegetable, Garlic, Fish, Mushroom and the Chicken, Beef, and Vegetable are all available as reduced sodium versions. For this dinner, I used the Roasted Garlic Base, but I toyed with using the Seasoned Vegetable Base or the Roasted Chicken Base…so many options and luckily I have all summer to try them all out!
I start by cutting up my potatoes–I purchased the store bought package with red, white, and purple potato varieties in it. Then I also bought a bag of fresh green beans and just divided everything up evenly. Next up, I spooned some Garlic Better Than Bouillon over the top of all the veggies and chicken and then I drizzled a little olive oil on top too and tossed it around. Finally, I wrapped up my packages and placed them on the grill for about 30 minutes or until done.
*I’m going to admit something here…I think I put a little too much Better Than Bouillon on the packets shown below. About half of what I used is more than enough to get great taste. I’d also change this up by gently tossing the veggies and chicken in the Better Than Bouillon prior to placing in the foil packet to more evenly distribute the flavor–lesson learned!
How to Fold Foil Meal Packets
I started my laying the foil horizontally and pulling the left and right ends to meet in the middle at the top. I gently roll them done at the top and then work on the sides. I pinch the sides down top to bottom and then roll up. Be sure that they are well sealed on all sides.
Once done, pull of the grill and check one of the packets to make sure that the chicken is done…then open up and enjoy!!
