Who’s looking for a new dinner recipe?! Well, today I’m sharing one of our favorite dinner recipes that I just made easier using Success Rice. I’ll be honest, before recently I’d never tried Success Rice. Then when I was trying it out this week and I opened the box I saw Success Rice was in bags in the box! Bags! I seriously yelled to my husband…”This rice is in bags! That’s so cool!” {he just kinda rolled his eyes at me}. So I read the instructions and was delighted to find out that the rice cooks in the bags too!
Raise your hand if you’ve ever overcooked rice so that it just burns to the bottom of your pan and you’re scrubbing for hours…ME. So I was pretty excited at the thought of quickly making rice, in bags, with little mess or clean up! And it cooks FAST…like in 10 minutes! No more cooking it and then covering it up…get your water boiling, put your bag in the water, and set it for 10 minutes. That’s it.
I’m sold.
So let me show you how I made my Fiesta Casserole…
Above shows what you need for this recipe…cook your chicken and your rice and while it’s cooking combine all your other items in a bowl…
Like I said, the rice cooks in a bag! It’s pre-measured and everything, super easy for on the go moms like us who already are juggling kids, husbands, pets, cleaning, cooking, and BLOGGING! 🙂
Once my chicken and rice were cooked I added them to the bowl with the rest of the ingredients and mixed. Then I put all the ingredients into a 9 x 13 pan and baked on 450 degrees for 15 minutes. After 15 minutes is up, pull it out and top it was 2 cups of cheese and put back into the oven for another 12-15 minutes. It will seem a little wet at first, but it will soak in as it cooks.
Once it’s done, it can feed probably 8-10 servings, which is perfect if you’re looking for a group dinner recipe that everyone can enjoy…and we SURE did enjoy it! Add a little Tabasco to it if you like a little extra kick too! I’m kinda in love with this product, making rice was so much easier this way…no measuring, no mess, none stuck to the bottom, and it cooks fast!
