I feel like I keep saying this, I’m in sports season “chaos” right now and getting a half decent meal on the menu any night of the week is starting to prove difficult. I shouldn’t even admit to the number of times we ate out in the past week…but suffice it to say it’s more than we had eaten out TOTAL in the month before! One thing I’m quickly realizing is that my inadequate quick meal planning is just not up to par at the moment, so I need to step up my game. During sports season I find myself relying on my Instant Pot and Slow Cooker more and more so that dinner is done before we leave for the evening and with minimal clean up! Today I thought I’d share with you an easy weeknight meal idea with this BBQ Ranch Slow Cooker Pulled Pork sandwich recipe. If you want to know the difference of a Crock-Pot vs Slow Cooker – click here.
This recipe is great because you need three ingredients plus your pork tenderloin…I put it all in the crockpot before I leave for work in the morning and when I get home I quickly shred it, make a side dish, and we eat ASAP so we can get onto the road for soccer and baseball.
All you need is a packet of ranch dressing, a bottle of BBQ sauce, and some chicken broth…and of course your pork tenderloin and a crockpot.
I start by pouring 1 cup of chicken broth into my crockpot and then placing my pork tenderloin in the cooker. I sprinkle my ranch packet directly on top of the tenderloin fully covering it.
After it’s covered, I top it off with a bottle of BBQ sauce. It may seem like a lot of liquid, but I have found that since we’re gone 10+ hours a day, it’s better to have more liquid in there so that the meat doesn’t dry out and it makes better sandwiches.
Place the crockpot on high for 6-7 hours and let it do it’s thing. You’ll come home to that delicious smell and be so thankful that you took the time to get dinner started so early on! I quickly shred the meat and then serve it on sub sandwich buns with cheese and pickles, noodles, and salad. We typically have enough for two dinners so I freeze the other half for a meal the following week!
This is seriously such an easy three ingredient dinner and I love that you can do so much with it…make pulled pork sandwiches one night, then the next week you can serve it over rice and create pulled pork bowls if you so choose…lots of options.
