Are you a mom ALWAYS looking for new snack ideas that incorporate fresh fruit, but put a fun spin on it? **raises hand** Truth be told, my son gets his super picky eating from me. I have a big sweet tooth and I’m a really picky veggie eater, but I do LOVE me some fruit! Fresh fruit, fruit dips, fruit pies…you name it I love fruit. Another thing I cook with quite often is Philadelphia Cream Cheese. I make tons of meal and dessert options and many of them involve cream cheese and I’ve relied on Philly Cream Cheese for as long as I can remember for my household. During the holidays, you should SEE the amount of Philly Cream Cheese I have to buy! LOL So today I thought I’d share an easy Mini Fruit Cream Cheese Pizza recipe that will satisfy your sweet tooth AND incorporate those fruits we all need!
In order to make these cute little pizzas, I started by heading off to Walmart to pick up what I need. The Philadelphia Blueberry Cream Cheese spread that I used was located in the outer aisle where they keep the bagels and cream cheeses.
I originally intended to use Strawberry Philadelphia Cream Cheese Spread, but you can tell this product is SUPER popular because they were out of the strawberry when I went to buy it…so I picked up a tub of the Blueberry instead, which worked just as perfectly.
You’ll also need:
Philadelphia Blueberry Cream Cheese Spread
Sugar Cookie dough (homemade or store bought)
Marshmallow Fluff in a tub (16 oz.)
Fruit of your choice cut up
How to:
Start by preparing a cupcake pan by spraying PAM Baking Spray on it and then slicing the cookie dough and pressing into the bottom of the cupcake pan and a little up the sides to create cookie “pies”. Bake the cookie cups for 10-12 minutes as specified on package and then allow to cool.
While the cookie cups are baking, start preparing your fruit and your fruit spread. Using a mixer, mix together a full tub of Blueberry Philadelphia Cream Cheese spread with Marshmallow Fluff until fully combined. Then start preparing your fruit.
After my fruit spread (the blueberry cream cheese and the marshmallow fluff) were mixed together and my cookies were cooled then comes the fun part of making your own little fruit pizza!
Set up a little bar for your family with the dip, the cookie cups, and the fruit and let everyone decide how they want to make their fruit pizzas!! The possibilities are endless!
These cups turned out so good and were the perfect mix of fruit and cookie and one cup is the perfect size for one person. I can totally see myself making these for baby showers or for entertaining small groups of friends. They’re very easy to make and they are very tasty! And if blueberry cream cheese isn’t your thing…try the strawberry flavor! Yum!!
