My husband always jokes with me that when I’m trying to make dishes with more veggies for our kids, my go to meal always is this amazing Spicy Beef Stir Fry recipe that I’ve made for years. The reason I like it so much is that it’s FULL of flavor and I can toss in any veggies that call my name when I’m making it. I can serve it over noodles or rice, depending on my mood, but my family’s favorite way to enjoy this dish is over noodles. Let’s see how easy it is to make this easy dinner recipe….
Here’s the simple recipe:
2 tsp ground ginger
1 tsp minced garlic
1/2 tsp crushed red pepper flakes
1/2 cup soy sauce
1/4 cup white vinegar
2 tbsp olive oil
1 1/2 lbs beef strips
1 tbsp cornstarch
stir fry veggies of choice (I used the pre-made bags in the produce department)
1 Bag noodles
How to:
In a skillet, add olive oil, garlic, and beef and begin browning beef strips. While beef is cooking, in a separate bowl mix together ground ginger, soy sauce, vinegar, and red pepper flakes and mix together well.
In a separate pan, begin preparing noodles according to instructions on outside of box. I used about 3/4 of the bag for my family of four for dinner.
While the pasta is cooking, check back in on your beef. If it’s fairly cooked, then add in your veggies and your sauce and turn heat onto medium. Allow to cook with sauce for about 10 minutes, then add in cornstarch to thicken sauce up.
Once your veggies are fully cooked, remove from heat. Drain your noodles and put a dollop of butter in the pot with them to keep them from sticking together.
Once ready to serve, add noodles to plate and pour beef, veggies and sauce over the top, then watch your family enjoy the full flavor this dish brings!
