You guys, my life is chaos right now. In between selling our house, buying a new one, a child that just started Kindergarten, soccer and baseball…I feel like we’re always on the go. For a while there, evening dinners consisted of whatever carry out food was closest and had a drive thru because we couldn’t risk messing up the house between showings. Now that our house is in contract though, we’re relaxing a bit more these days, but still need quick dinner ideas. Today I’m sharing with you a delicious Mediterranean Chicken and Rice Wraps that are so easy and SO delicious!!
Ingredients:
2 cups of shredded chicken (I used a store bought rotisserie chicken and pulled the meat off)
feta cheese
kalamata olives
hummus
tortilla wraps
Uncle Ben’s Long Grain Rice Medley
I went the easy route for this meal…you can make your own chicken and shred, but to make life easy I bought a store bought rotisserie chicken and pulled the meat off. While I was pulling the meat off, I start my Uncle Ben’s® Long Grain & Wild Rice Fast Cook Recipe on the stove and got to assembling the rest of the ingredients.
Once the rice is done and the chicken is shredded, you create your wraps.
I started with hummus on the bottom, next added some crumbled feta, then sliced kalamata olives, next I added chicken and finally I filled it up with rice.
Roll it into a nice tight burrito and place into a freshly greased pan on medium heat. I then gently heat all sides of the burrito to melt the cheese a bit and make the tortilla a bit crispy.
Once done, slice in half and serve with pita chips and ranch for dipping. It’s a REALLY good and simple meal idea that combines a lot of the essentials in a meal all rolled into one tortilla. OR if you’re looking for a better option, leave the tortilla off and just eat the combination like a burrito bowl with hummus on top (did that for lunch today and it was JUST as tasty).
Uncle Ben’s makes it easy too with tons of other rice combinations, as well as the fact that you can make the rice in just FIVE MINUTES on the stove!! My whole meal took about 15 minutes to make and it was enough for four of us to enjoy with leftovers for the next day.
