I have to admit to you all that I’m actually really excited to be guest posting here at The Cards We Drew today! I’ve been reading Abbey’s blog for as long as I can remember and just love all of the recipes and projects that I’ve seen! Today I want to share with you a recipe that we absolutely love. These double chocolate cookies are super soft and full of mini chip goodness. I may have a stash of pre-rolled dough in the back of my freezer that I keep for emergencies. You never know when you’ll need to pull one out to help with those chocolate cravings!
1-1/2 cups flour
1/2 cup cocoa (I use Dutch)
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 -1/2 cups sugar
2 eggs
1 teaspoon vanilla
10 oz. mini chocolate chips
Preheat your oven to 350 degrees. Line two cookie sheets with parchment paper, and set aside.
Whisk the flour, cocoa, baking soda, and salt in a medium bowl. Set aside.
Cream the butter and sugar in the bowl of your electric mixer. You want this nice and fluffy, so I’d say about 3-4 minutes. Add the eggs, and vanilla. Mix well. Slowly stir in the dry ingredients. Fold in the chocolate chips.
Roll 2t of the batter into a ball, and place on your prepared cookie sheets. Continue until all of the cookies are formed. Bake for 10 minutes.
Bake these up to share with friends and family (or keep for yourself) and you are sure to be the favorite. Be sure to serve with a nice tall glass of cold milk! They are perfect for Easter or Mother’s day. After all… The way to the heart is through your stomach, right?
