Mexican Black Beans and Rice

  • 3 cups rice, cooked
  • 1 can black beans, warmed
  • 1/4 cup lime juice
  • 1 tsp cumin
  • 1 tsp garlic salt
  • 1/2 tsp season salt
  • chopped cilantro (optional)


  • Start by preparing your choice of rice--white rice, instant rice, brown rice, basmati rice...whatever suites your family best. Prepare your rice until it's completely cooked, then put it into a bowl.
  • In the bowl prepare mix in one can of drained and rinsed black beans, warmed through. Then add in 1/4 cup of lime juice, 1 teaspoon of cumin, 1 teaspoon of garlic salt, and 1/2 teaspoon of season salt. Mix thoroughly and taste. You can add more seasoning (cumin or garlic salt) if it needs more flavor.
  • Serve immediately warm...it's also very good topped with shredded cheese and a bit of sour cream and/or hot sauce!
  • Optional: add in chopped cilantro
