Toffee Banana Rum Bread

Ingredients

  • 2 1/2 cups Bob's Red Mill Organic Flour
  • 1 cup sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup + 2 tablespoons milk
  • 1/4 cup vegetable oil
  • 2 teaspoons rum extract
  • 1 egg
  • 1 cup mashed ripe bananas about 3 medium bananas
  • 1 cup chopped nuts optional
  • 1 1/3 cups Heath Bits of Brickle divided

Instructions

  • Heat oven to 350
  • Grease and flour two loaf pans
  • Stir together flour, sugar, salt, baking powder in large bowl
  • Add milk, oil, rum, egg and banana.
  • Stir until well blended
  • Spread 1 1/4 cups batter in the bottom of each pan
  • Top each batter with a 1/2 cup of toffee bits
  • Gently spread about 1 cup remaining batter in each pan
  • Sprinkle remaining bits over batter
  • Bake 30-35 minutes or until toothpick comes out clean
