Cocoa Almond Snowball Cookie

Ingredients

  • FULL RECIPE FOR 4 DOZEN COOKIES:
  • 1 lb. 4 sticks Land O' Lakes Butter (cold)
  • 1 cup confectioners sugar
  • 5 cups flour
  • 1 tbsp vanilla
  • 4 cups Planters Cocoa Almonds chopped using food processor
  • HALVED RECIPE:
  • 1/2 lb. 2 sticks Butter (cold)
  • 1/2 cup confectioners sugar
  • 2.5 cups flour
  • 1/2 tbsp vanilla
  • 2 cups Planters Cocoa Almond chopped using food processor

Instructions

  • Using food processor, chop up almonds into fine mixture (see photo for reference).
  • Combine all ingredients in a bowl--leaving butter out.
  • Add sticks of cold butter and use two knives to cut the butter into the dry ingredients until all the chunks of butter are roughly dime or nickel size.
  • From there, wash your hands and gently crumble the butter and dry ingredients together…this is the most time consuming part of the recipe.
  • Once ingredients are mixed and combined, roll into balls and place on lined baking sheet.
  • Bake at 325 degrees for 35 minutes
  • Once baked, while still warm, roll in confectioners sugar
