I’m always trying to find new and easy breakfast recipes for my family or for occasions when I’m hosting friends over for a weekend. This Easy Sausage Breakfast Casserole is based off one of our favorite Cheesy Potato recipes, but adapted for a delicious breakfast version of the potatoes we know and love. This breakfast casserole is perfect because you can make it ahead, it includes your breakfast favorites with delicious sausage, hashbrowns, and loads of flavor! This breakfast casserole will feed a crowd too. Growing up, my aunt used to make this for us for Thanksgiving breakfast while they were cooking. It easy serves 6-8 people and you can double the recipe for larger crowds. Let’s jump into how to make this easy Sausage Breakfast Casserole recipe!

Easy Sausage Breakfast Casserole Recipe
To start, you will need to cook your sausage until done, then set aside. In a bowl, mix together your soup, sour cream, cheese, and onion dip and mix well. Once mixed, fold in your potatoes (we like to use the “chunked” version with onions and peppers in the mix.
After the potatoes are mixed together, you’ll want to lightly grease a 9×13 pan and pour roughly half of the mixture into the pan, then top with your cooked sausage evenly. Finally, add the next layer of potatoes over top and pop into the oven.
Bake in the oven at 350 degrees for about 45 minutes to an hour. The time varies depending on how thawed the potatoes were going into the casserole. Test a few potatoes towards the center to ensure that they are cooked through prior to removing from the oven. The casserole should have a nice golden brown look across the top and be crispy around the edges.
As an optional topping, you can top with some green onions for flavor and for some color. My husband likes to add hot sauce to the casserole when he eats this. My kiddos like to eat it with ketchup. I like to eat it just as is because it’s full of flavor no matter how you enjoy it! 🙂
Can this be a make ahead breakfast casserole?
Yes, I have made this the night before and then put into the oven the morning of. We’ve done this breakfast on Christmas Day this way and it’s perfect regardless of when you cook it.
What kind of potatoes do you use in this breakfast casserole?
We like to use the chunked southwest potatoes for this recipe. I have not made it with hash browns before and assume that it would still work this way, but the cooking time made need adjusted if making with smaller sliced hashbrowns.
Is there a healthy breakfast casserole version of this recipe?
For a healthier version of this sausage casserole you could use fat free or low fat sour cream, as well as fat free cream of chicken soup. You could also add some optional veggies into the mixture too if so desired.

How to Make Breakfast Casserole…
Sausage Hash Brown Breakfast Casserole
Ingredients
- 2 lbs mild sausage
- 2 cups shredded cheese
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup french onion dip
- 1 bag of hash browns with onions and peppers in them thawed
Instructions
- Cook sausage.
- In a large bowl combine shredded cheese, cream of chicken soup, sour cream, and onion dip and then fold in potatoes once mixed.
- Spread half into a greased baking dish sized 9x13 and top with cooked sausage.
- Top with remaining potato mixture.
- Bake at 350 degrees for 46-60 minutes. Serve warm.
