This time of the year is awfully confusing for kids because Halloween just ended and retailers are already getting Christmas stuff out. But we still consider it fall and hone in on our fall and pumpkin recipes, so today I thought I’d showcase my Pumpkin Spice Bundt Cake recipe that’s PERFECT for a Thanksgiving dessert at your inlaws house! And the best part?? It’s a modified boxed cake mix! Win win!!
This recipe is very easy, it’s a combination of yellow cake mix, two small boxes of seasonal pumpkin spice pudding, as well as a few splashes of Pumpkin Spice Coffee Creamer.
This cake is super moist and rich, so pairing it with a nice warm cup of coffee will counter the sweetness a bit and be the PERFECT fall treat!!
Here’s the easy recipe:
Pumpkin Spice Bundt Cake
Ingredients
- For Cake:
- 1 box of yellow cake mix
- 2 small boxes of instant seasonal pumpkin spice pudding
- 1/2 cup of veggie oil
- 1 cup water
- 1/8 cup milk
- 1/8 cup Pumpkin Spice Nestle Coffee-Mate Creamer liquid
- 4 eggs
- For Frosting:
- 4 cups powdered sugar
- 1 stick butter softened
- 1/3 cup Pumpkin Spice Coffee-Mate Creamer
Instructions
- Preheat oven to 350 degrees and grease your bundt cake pan well.
- In mixing bowl, combine cake mix, puddings, oil, water, milk and eggs with electric mixer. Pour into prepared pan and bake 40-45 minutes or until toothpick inserted comes out clean.
- Let cake cool.
- To make the frosting, use an electric mixer and combine powdered sugar with butter and coffee creamer until you reach your desired frosting consistency. Add more powdered sugar if it's too thin and more creamer if it's too thick.
- Frost cooled cake and enjoy!

I just made this. At the moment you can’t buy Pumpkin Spice instant pudding. So I ended up getting two Vanilla Instant Pudding and adding 2 teaspoons of Pumpkin Pie Spice. Cake came out Amazingly delicious. Since my wife and I love Pumpkin Spice, I also added a few shakes to the icing. Well worth it.
