So the other day I went into Trader Joe’s and FINALLY remembered to pick up and try some Cookie Butter. Yes, I was a cookie butter virgin. Everyone raves about it, so I was excited to try it out. We came home, ripped the lid open and stuck a spoon in to try…and I was really pleasantly surprised. It’s good! It’s not overwhelmingly sweet or anything, but it’s really tasty. After we tried it I got to wondering…just what was I going to put this Cookie Butter on? And then the idea hit me today! Ever had a PEANUT BUTTER No Bake Corn Flake Cookie? Well today, I introduce to you COOKIE BUTTER No Bake Corn Flake Cookies!! It took about 10 minutes to make and they were really unique and tasty!
Cookie Butter No Bake Corn Flake Cookies
Ingredients
- ¾ cup white sugar
- ¾ cup light corn syrup
- 1 cup Cookie Butter from Trader Joe's
- 4 cups of corn flakes
Instructions
- In a sauce pan over medium high heat combine corn syrup and sugar. Bring to a boil and quickly remove once boiling.
- Add cookie butter to the pan, stir in.
- In a separate bowl, add cornflakes and pour mixture over cornflakes.
- Gently scoop and roll into 1-2" balls, let set and enjoy.

You can eat them when they’re warm and soft or let them firm up and eat them once they’ve set…either way, they’re a great treat that’s kind of perfect for fall. I suggest a nice cup of coffee or apple cider with them! Haven’t tried Cookie Butter just yet? It’s kind of “gingersnappy” tasting if you ask me…very yummy! Enjoy!
