Little known fact about me–I love two foods more than anything else…cupcakes and anything with buffalo sauce on it. You know, Frank’s Red Hot? “You put that **** on everything!” I love that sauce made into buffalo chicken dip more than I should probably admit. I also love Buffalo Wings…of the boneless kind. I sometimes wonder how combining my two loves would taste?? 😉 not really…hmmm…
Last week I made buffalo chicken dip and got to thinking about how easy it would be to modify that recipe and turn it into a sandwich. Oh, and if you’ve never tried buffalo chicken dip, then you’re crazy (side note: I make mine with ranch and cheddar cheese). Moving on–
I decided that maybe I’d try my OWN recipe and make some Grilled Buffalo Chicken Sandwiches for my family for dinner that night.
Bread (I got that nice thick loaf from the bakery)
Two Cans of Swanson Chicken
Frank’s Red Hot
Shredded Cheddar Cheese
I emptied the two drained cans of chicken into a medium sized mixing bowl and broke it up really well. Then I added about 3 spoons fulls of mayo into the chicken and stirred it in. From there I added a about 1 cup of cheddar cheese, a few squirts of ranch dressing, about 3 tablespoons of Frank’s red hot, and I mixed it all together. There aren’t exact measurements to this recipe, do it to your personal taste and consistency.
Once I tasted it and realized how tasty it was, I buttered my bread (like you’d make a grilled cheese), layered on the chicken salad mixture, and through it on the stove until both sides were browned and the inside was warm.
I served it with some tatertots for my boys and we all really liked the little concoction.
For someone who loves a little spice and kick in their life, this sandwich was really quick and tasty and a fun way to mix up dinner time. AND–it’s tasty cold too! I brought it into work with me on regular bread and ate it cold the next day for lunch.
