Mini Meatloaf Dinner {30 Minute Meals}

Mini Meatloaf Dinner over Mashed Potatoes and Green Beans #WeekNightHero #ad

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #WeekNightHero #CollectiveBias This week is the last of my four week series on 30 Minute Meal ideas! I showed off my Beef Enchilada Pasta Bake, Easy Swedish Meatballs, and my Chicken and Stuffing Veggie Casserole! Finally today we're wrapping up with a Mini Meatloaf Dinner idea with mashed potatoes and green beans, as seen on the back of the Campbell's Soups for Easy Cooking carton! There's a local restaurant that we go to that has amazing meatloaf that's piled on top of green beans and mashed potatoes with gravy, so today I thought I'd … [Read more...]

Choosing Courage Everyday

We're ending our first Recipes for the Heart month this week with our final conversation on courage. We talk about courage and bravery a lot in our house. For my two toddlers, I've boiled it down to, “Doing something even when you feel scared.”   I believe in living each day bravely, walking ahead despite fear, despite criticism, despite all the “what if’s” that seek to freeze us in our tracks. But believing in something and actually doing it are two different things, and here is where I find myself at a crossroads over and over again. Four years ago, my husband and I were in the process of adopting our foster son. We began caring for … [Read more...]

Hand Drawn Family Photo & Frame {Giveaway}

navy blue and white wood frame

Last week you may have seen where I spent some time updating my entry way with a fun new end table and some decor. Today I'm sharing with you my FAVORITE part of my mini-makeover with this awesome hand drawn family photo and frame that is now hanging above my table. The drawing is from the talented Design by Marlies, where she takes your family photo and transfers it into a hand drawn masterpiece. I contacted Marlies and she had me send in the photo of my choice. Obviously, my photo cut my son off at the waist, but I told her what color pants he had on and my pink shoes and she added on the rest. I really had wanted the pink bow my … [Read more...]

Pear Gorgonzola Flatbread Pizza

quick and easy pear gorgonzola flatbread pizza

This post is sponsored by PAM, but all opinions and thoughts are my own. I recently shared with you my weight loss story and how I lost 14.5 lbs in 60 days. During this time it was hard to find foods I really enjoyed eating that were also good for me. One thing I could afford to eat that I also loved was this simple Pear Gorgonzola Flatbread Pizza. It takes a matter of minutes to make and it's made with a whole-wheat based flatbread that makes it allowable for my program. The pear is a nice sweet taste with the salty gorgonzola cheese! Check out how easy it is to make and why I use PAM Cooking Spray o save time during prep and for easy … [Read more...]

Boca Essentials Veggie Burgers

BOCA Veggie Burger

When I started my diet back in January, part of the diet included having to eat 5 fruits/veggies every day as part of my 10 healthy foods. I'll be honest, there were some days that I wasn't sure that I could possibly add in another fruit or veggie, but I quickly learned that I needed to find ways to include my fruits and veggies in foods as part of the meal instead of in addition to my meal. Soon enough I realized that there were products out there like BocaEssentials that can help you combine your efforts into one meal and it's something you can make quickly too! New Boca Essentials is a line of vegetable- and grain-based patties that … [Read more...]
