You guys have shown me such amazing love lately on my Crockpot Pizza Casserole post, that I wanted to hop right on and show you another family favorite…Crockpot Cheesy Chicken Rigatoni. Maybe you’ve heard of Chicken Spaghetti before? Well, this is very similar, but it’s made in the crockpot! The recipe was handed down from my inlaws in Texas and it’s the perfect winter comfort food recipe for your family!
1 lb chicken breasts
1 cup water
2 chicken bouillon cubes
salt and pepper to taste
*may substitute water and bouillon for chicken brother
1/2 large block of 2% Velveeta cheese
1 box of Rigatoni, cooked
1 can of cream of chicken soup
1 can of Rotel
2 cups of sharp cheddar cheese
To make the Cheesy Chicken Rigatoni, I started by cooking my chicken in the crockpot with one cup of water, two chicken bouillon cubes, and seasoned well with salt and pepper. I cooked on low for about 5-6 hours and then chopped it up once done.
Next, I removed my chicken and set aside on a plate, cleaned out my crockpot, then added in my Velveeta cheese (half the large sticks), one can of cream of chicken, one can of Rotel, and mixed well. Once it was melted and mixed, I added in my chicken and my cooked pasta.
Stir the pasta and cheese mixture well and then top with one bag of sharp cheddar cheese.
Put the lid back on the crockpot and leave on low for about 30 minutes until the cheese is melted on top.
Serves about 6-8 people and is DELICIOUS reheated for the next day’s lunch.
