Each week it seems I have issues trying to incorporate a healthy meal with something tasty and quick to make. Today, in an effort to mix it up a bit, I tried out a recipe I discovered on Pinterest from Mels Kitchen Cafe.com. The recipe is for Crispy Southwest Chicken wraps and it’s REALLY good. As a matter of fact, my husband described it as “tremendous” when he was done! YAY!!!! AND my little boy, the pickiest of eaters, also ate it obligingly. DOUBLE SCORE!
So here’s the recipe.
I edited it a little bit to fit my family. Here’s how I made it:
1 cup cooked rice, warm or at room temperature
1 cup cooked chicken (I cooked with garlic salt, olive oil, and red pepper in a skillet)
1 can black beans, rinsed and drained
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese
Sour cream (optional)
Jalapenos (for my husband)
+Rotel/Velveeta cheese combination in my hubby’s burrito
6 burrito-sized flour tortillas
I mixed together the rice, spices, beans, meat, and set aside in a bowl. Then I opened my burrito tortilla and layered some sour cream, cheese (and in my husband’s case jalapenos and queso). Then I layered the rice and chicken mix on top of the burrito, rolled it up, and threw it in a skillet to heat through. We let it cook for a couple minutes on each side and then put it on a plate.
I served it with ChiChi’s corn cakes, tortilla chips, and the boys loved it.
The thing I liked about this meal was that it combined everything together so that my son was actually getting chicken, corn, peppers, rice, black beans, and more all in one meal. All things he wouldn’t eat on his own ever, but mixed together in a tortilla he loved. And best of all, there was a ton leftover so we already have some more to make for another “tremendous” dinner tomorrow night too. 🙂
