My hubby started baseball season two weeks ago; he’s a high school JV baseball coach. As much as I love that he’s teaching our local youth all his years of knowledge about baseball, I also have learned to become somewhat of a single parents in the evenings to our three year old son. You don’t realize how much easier it is with two parents home until a sports season starts and all of a sudden it’s just you! I get home from work, try to pick up the house, play with my son, and get dinner started. Weeknights FLY past us because it’s just so much busier now!
For YEARS I have used Minute® Rice to make my meals. The other rice brands just take too long and I like the convenience and the taste of Minute® Rice and it’s nice to have a “go to” side dish that can go with just about anything! One of my FAVORITE meals to make that’s quick, easy and flavorful is my Spicy Chicken Stir-fry. It’s easy to make and I just LOVE the taste!
Ingredients:
2 tsp ground ginger
1 tsp minced garlic
1/2 tsp crushed red pepper flakes
3 tbsp soy sauce
3 tbsp white vinegar
2 tbsp olive oil
1 1/2 lbs boneless chicken cut into strips
3 cups cooked Minute® Rice
Directions:
1. In a small bowl, mix together ginger, garlic, and red pepper flakes. Add soy sauce and vinegar and set aside.
2. Place wok (or large skillet) over high heat and drizzle olive oil in. Heat oil until hot and add chicken to wok. Stir fry several minutes until lightly cooked on all sides and add soy sauce mixture to the wok. Continue to stir until cooked.
3. Remove from heart and serve over hot cooked Minute® Rice.
Takes all of 15 minutes between cooking and prep time and you can add veggies or other items to the stir fry as you like. I like to add water chestnuts, carrots, and bean pods to it sometimes, as well as broccoli. It’s also really good just chicken and rice too, which is the way I make it a lot. If your kids are worried about the spice, leave the crushed red pepper flakes out until you are done, pull out some of the chicken for your kids, and then add the flakes and cook another minute or so. I do that for my son all the time.
The Minute® Rice is SO easy to make. Follow the instructions on the side of the box. It takes a matter of minutes to make and you can do it on the stove or in the microwave.
