International Delight Light Iced Coffee Recipe

You can find me daily jonesin’ for my next coffee fix…I love coffee–pretty much in all forms (hot, cold, frozen, mixed, and more). I didn’t start loving coffee until I entered the job market, fresh out of college, but my coffee love definitely grew greater and greater. Nowadays, my mornings start off with two hot cups of coffee and by afternoon I’m wondering if I should go to the local coffee shop, who’s name will go unmentioned, to get some iced coffee. The problem? My budget doesn’t love those coffee shop fixes…neither does my husband. And half the time they load my cup so full of ice that 5 sips later my drink is finished–boo.

I try to brew iced coffee myself, but it just turns out tasting cold and stale tasting instead of “iced.” So imagine my international delight {couldn’t help myself} when I found out that International Delight put out a Light Iced Coffee that is both low in sugar, but has reduced calories! I shopped at Walmart and got all the items I needed to create a Light Iced Coffee Knockoff Frappe Recipe that will be lower in calories, less money out of my wallet, and still just as tasty! RECIPE:

1 cup of International Delight Light Iced Vanilla Coffee

1 cup of Vanilla Frozen Yogurt

1/2 cup of ice

Whipped Cream and Cookies or other toppings

I took my coffee, ice, and yogurt and blended it together quickly in my blender. I tried not to overblend it so it didn’t get too runny. I used crushed ice from my refrigerator to make it a little easier. Once it was blended, I poured it into a mason jar and topped it off with some whipped cream and a Mint Oreo cookie…oh and of course, a pretty green paper straw to match.

The end result? Delicious. It took me a matter of minutes to make…and to drink for that matter. The International Delight Vanilla Iced Coffee is SO creamy…just pouring it out of the carton makes me giddy because I seriously love creamy drinks and you can see it just pouring it out.

    YUM. I also have a coffee problem… 2 cups in the morning, iced all afternoon! My tip for brewing iced coffee at home is to brew it twice as strong as a hot cup, because I always find it’s stale or weak or… something off. I use a Keurig, so I pack in the grounds and brew some strong cups, pour them into a pitcher & stick it in the fridge. I also tried a few times to brew the iced coffee over ice (which obviously melts and cools the coffee), then add more ice to it, which works well too. Can’t wait to try your recipe – it looks amazing!!!!
